During this fun and informative hour and a half workshop, you will learn about the science of chocolate, sugar content in chocolate, and what chocolate percentages mean. I go on to demonstrate chocolate tempering. We will then jump into making your own personal chocolate bar using molds. While you are making the bars, I will demonstrate how to make a chocolate ganache and how to form a truffle. At the end of the class, we will sit down with tea and get to taste different varieties of chocolates. You will go away with the ability to temper chocolate, make bars and truffles at home, and take home a gift bag with the bars you made and a bag of truffles!
I'm the owner and executive chocolatier of Obsessive Chocolate Disorder, located in the vibrant East Village. I opened this shop after spending years learning about and experimenting with chocolate. I am constantly creating new recipes, trying new and unusual combinations of flavors and textures. Sharing my passion for the science of chocolate is something I love to do!
