You are welcome to reach my farm, Bucolica Cultural Agricultural Club. A place where nature meets the city and where tradition becomes a new discovery. Together we will prepare fresh pasta, savoring everything behind it. We will start from the wheat fields, where we sow ancient Tuscan varieties and we will observe their development in the season. We will then take the seeds of this precious cereal in hand to grind it with a small stone grinder, observing how the flours differentiate from the wholemeal flour and which are the healthiest for our body. We will then collect the eggs in the hen house in the middle of a small olive grove, where we raise three different native breeds of hens. We will then move to the garden to collect seasonal vegetables and aromatic herbs to prepare the right seasoning. In the end we will knead a hand the ingredients to get our fresh pasta. We will turn on the stove, cook the pasta, eat our menu together from the field to the table. Participants will have the opportunity to get out of the hustle and bustle of the city, immerse themselves in nature by coming into contact with all its elements.
I am Filippo Zammarchi I am 28 years old, I am an agronomist, farmer and beekeeper. I am a Slow Food member because I believe in its principles of protecting ecological and cultural biodiversity, in all its facets from field to table. On my farm "Bucolica Circolo Culturale Agricolo", a piece of land stuck on the outskirts of Florence between city and countryside, I cultivate the biodiversity of this place following the practices of Agroecology and transform the products of the earth trying to keep intact all their characteristics from the field to the table. The ancient grains of traditional Tuscan varieties are one of the latest adventures and with them the world of flour, grinding, agricultural rotations, bread-making and pasta.

All the necessary equipment will be made available to grind the wheat, sift the flour and prepare the fresh pasta.
The whole experience takes place on my farm, between wheat fields, vegetable gardens, educational apiaries, orchards and olive groves. Nature will be at the center of this small glimpse of country life, even if the city has never been so close. I will host you in what we now call an urban farm. The village of Lastra a Signa a small medieval village is on the outskirts of Florence just 15 minutes by train.
