You'll be welcomed into my home with a glass of wine and appetizers (not to mention a very friendly senior English Bulldog!) while we prepare the ingredients for our fantastic meal made entirely from local Flatbush butcher meats and market produce. Together, we'll make dishes that utilize familiar ingredients in new ways, such as chicken posolé verde, slow-roasted tomato blood orange stew, lavender kombucha, olive oil cake with plum sumac glaze, fresh sourdough bread, labneh, and homemade banana ice-cream. As we work together to dice, chop, blend, bake, sizzle, and sear, we'll discuss ways to transform your cooking habits and bring in a variety of flavors, ingredients and techniques to make you a better cook. You'll learn the basics of fermentation, bread baking, and how to best pair different foods. All in the heart of Brooklyn!
We'll be using my well-stocked apartment in the heart of the Flatbush neighborhood in Brooklyn. You'll get to see what daily life is like in this busy, food-focused Caribbean community.
