Throughout this one day course students will learn the essentials of sourdough making and the more technical side of baking for increased digestibility and nutritional content. Class will run from 11am to 5pm. We will cover sprouted, soaked and fermented loaves for better gut health and students will leave with ingredients, recipes, their own sourdough starter as well as their fermented and baked loaves, scones, flatbreads and cookies. This class is brilliant for anyone interested in improving their gut health, suffering with an auto-immune disease, seeking more out of their food for increased performance and endurance, suffering with IBS or simply loves the art of bread making and wants to learn more. Not suitable for coeliacs or dairy intolerance. If you are unsure about whether or not you may have an intolerance to gluten or dairy please do come with an open mind. We ferment our recipes in such a way that we make all our baked good very digestible for anyone suffering with a compromised gut and microbiome.
I am The Founder of The Happy Tummy Co. which helps people make and bake bread for better gut health. I founded the company in 2014 after I created recipes in 2013 to completely eradicate my IBS symptoms. Up until 2019 I had a bakery in Hackney East London where we made a special form of slow fermented bread for people with gut issues throughout the UK and Ireland. The bread I make and teach helps people to manage their IBS symptoms and increases endurance levels by 25%. If you are into food as preventative medicine then this is a class for you. I believe in slow, fermented, organic food as a way of healing both the body and mind.
A nourishing lunch of slow fermented breads with plants, pickles, salads and ferments will be provided.
We will be based at my bakery school in Laughton which is a 15 minute drive from Lewes town, overlooking the beautiful Downs.
It can be difficult to find the house if you are arriving by car but don't worry, I'll be on hand to answer any calls and shall email very good directions prior to the class. Otherwise it is very easy for me to pick you up from Lewes train station.
