Let's cook together! We will go through the whole process and will cook the best mole you will ever taste!

“Manchamanteles” Mole is a fruity mole sauce that originates from the Mexican state of Puebla. This versatile sauce can be served over pork loin, chicken, quesadillas, enchiladas or any dish of your choice. In our class, we will try adding mole to a Quesadilla, and then you can use the mole however you wish and have a creation of your own.

Mole can be a very complicated dish to prepare, and there are many ways to do it, but the Manchamantel Mole from Puebla can be the most desirable for this experience because it's an easy one to prepare, yet sophisticated enough to make it a great one.

This will be an interactive experience where you will learn how to prepare the Mole, ask as many questions as you have, and interact with other people doing the same thing to see who can make the very best mole. This is perfect for lunch or for dinner!

  • 50-100 grams Dried ancho chili peppers (Or any whole dry chili. Chili powder doesn't work as substitute) Soak the chilies overnight or for 10 minutes in hot water prior to the class. Save the seeds to add later for more spice.

Wonderful class, I can't recommend it enough! I've had mole before, but it's the type that's made with chocolate -- that seems to be the most common type in this part of Texas. But I liked Jacinto's mole recipe much more -- the fruit and the chilies were an incredible (and unexpected! combination. I'm recommending this class to all my friends.

Wonderful class. I've taken nine cooking classes thus far during Covid-19 and Jacinto's class was one of the best. Loved the stories, the background info, the tips and most of all the final result. Layered flavors, complex and yet not complicated to make. This recipe is definitely going to make its way into our rotation of dishes to cook over and over and over again.

Friendly, knowledgeable and it was nice to dip my toes into the Mexican food culture. Jacinto was very charismatic and was very passionate about the way that food brings people together. Would definitely recommend this unique experience. Flavours of the mole were delightful!

What a great teambuilding experience for our team. The hour felt like we were transported directly to Mexico City as Jacinto shared personal stories and guided us through the perfect mole creation.

This experience was amazing! My mom and I took the class and felt truly immersed into the storytelling and sense of community that chef Jacinto gave us.
