You are invited to experience a working chocolate farm on the Big Island of Hawaii. We’ll start with a beautiful walk through the farm exploring the chocolate—cacao—orchards and bee hives! As we walk, Lynda will share the history of her farm and discuss cacao farming practices and facts about the cacao farms and chocolate grown on the island and throughout the globe. You will harvest the pods by hand, taste raw cacao beans, witness Lynda's fermentation and drying process, and learn about roasting. You will be cracking and winnowing (removing the shells) the roasted beans. You witness the grinding (conching) and tempering machines in operation. You will walk away with a whole new appreciation for chocolate, a satisfied sweet tooth, and your own dark chocolate sample.

We'll be on Lynda' s4.5-acre estate chocolate farm near the historic town of Pahoa on the Big Island of Hawaii. Her farm has 200 cacao trees that produce Hawaii-grown chocolate. The property has had no pesticides for over 30 years. Lynda harvests the fruit by hand, ferments, dry and roasts the beans on site. This is a true farm-to-table, or should we say, tree-to-bar experience.
Bring your camera and wear comfortable shoes. You must provide your own transportation. Maximum group size is 6-8 guests and please be social, as other travelers might be joining you.
