You’ll learn the local history and be wowed by the science of how tides provide the ideal water for oysters. Then, you’ll explore our aquarium that features some of the fascinating local sea creatures. Finally, master the art of oyster shucking and gather round communal rustic tables to eat your fill of Flaggy Shore oysters along with a suitably paired glass of wine.

As a marine biologist I have worked in all aspects of the oyster world for many years—breeding, growing, marketing, opening, and eating. I now run a business with my daughter and son, Ciara and Lorcan, and we can’t wait to share our experience with you. We’ll do our best to make your visit informal, informative, and entertaining.

The workshop will take place at our family oyster warehouse on the seashore. It is on New Quay Pier in County Clare and is just beside the famous Flaggy Shore.
Clothing and footwear suitable for being in a sometimes wet area.
Our premises is a wet environment and can be quite chilly due to the seawater that is flowing through it. For this reason guests should wear warm clothing and appropriate shoes.
