Standard classes begin with an introduction to the spices, herbs and ingredients that we will be using in the recipes. I will talk about the healing aspects of them and what kinds of flavors and nutrients they add to the food. Afterwards we will begin to cook! It is a communal and collaborative effort. We will work together to prepare three to four dishes. (Including Morroccan salads/appetizers, and tajine -- vegetarian options available!) Once we are done cooking, we will eat! We will have a communal meal at the table, with wine and good company. Or if you prefer at the end of each class, you will be given a to-go box, with your cooked meal to share some of the delicious food you cooked . I will also email you a recipe book so that you can make the dishes yourself. My name is Aliza and I am the founder of Manna Lanu, a holistic food concept. I grew up in Jerusalem, Israel, in a large Moroccan family. Cooking was essential for my family’s bonding, vitality, and traditions. My grandfather was a spice dealer, and taught me the healing properties of spices, so I use abundantly in my cooking. My focus is French-Moroccan/ Berber, influenced by what is is available fresh from local markets. My cooking is always fresh, colorful and festive, made with lots of imagination and love. I teach the healing qualities of herbs and spices beyond flavor. At the end of the class we will have a communal meal. You will also have the opportunity to take food to go and a recipe book
Most classes will take place entirely in my house, in the incredible neighborhood of Bed Stuy Brooklyn. Some experiences, may include excursions to spice stores and farmers markets, which will offer a unique experience shopping together.
