In this approx 2.5 hr hands-on experience participants will meet us at the sugarhouse. From there we will take a tour of the sugarbush (maple forest) to discuss maple tree identification as well as tapping guidelines and techniques. If weather allows we will collect some sap from previously tapped trees. We will then return to the sugarhouse and discuss a variety of ways sap can be boiled down to syrup using equipment many guests will already have at home. We will then light our wood fired evaporator and participants will be actively involved in the boiling process (checking sap levels, adding wood to the evaporator and drawing off finished syrup.) We will then proceed to filter the syrup we just made and discuss various options for filtering syrup at home. Finally a batch of syrup will be heated and the participants will be instructed on proper sanitary bottling teachniques and will bottle/grade a bottle syrup that they will take home with them. The goal of this experience is for participants to go home with the confidence to indentify maple trees, tap appropriately, boil sap down to syrup and bottle the finished product safely while using readily available equipment at home.
My wife and I own Maple Moon Farm in Lebanon, Maine and have been making pure maple syrup for the last 10 years. We enjoy teaching others about maple sugaring’s historical significance to this area as well as the skills/equipment needed so that guests can return home with the confidence to make syrup for themselves and their families. In addition to farming, Frank has been teaching graduate students for the last 12 years and enjoys passing on skills/knowledge to those who are new to the subject matter.
