Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. We will cook them following the traditional recipes, with fresh scattarisciati tomatoes or with cime di rapa (turnip greens), depending on the season. In addition to ‘’our orecchiette’’, we will taste a typical Salento menu consisting of tarallini, frise, cheese, mozzarella, legumes and vegetables that we could also have the chance to harvest from our home’s garden, depending on availability. There will also be a good bottle of Salento wine on the table and the liqueur made with laurel leaves collected from the great hedge of grandparents’ house. Narrations and explanations on the history and traditions of Salento will accompany the culinary experience.
When I went to visit my grandmother in Ostuni as a child, she would always say to my grandfather "pre' pre', facim do stacciodd p' la piccenna’’, ‘’come on, come on, let’s make orecchiette for the kid’’. And immediately the board, the semolina in the big cotton bags and the lukewarm water in the kettle that I still keep, appeared. My task was to place the orecchiette magically created by my grandmother's hands, under the watchful eye of my grandfather. Now that these beloved people are no longer with us, the wise hands of my aunt have taught my daughters and I the noble art of preparing orecchiette at home, so that family, traditions, affections, memories, smells, tastes, rituals don’t get lost.

Depending on the season, we will be in the living room or in the garden to enjoy the colors and scents of Salento. The experience can be carried out in the morning or evening at request.
