Colorado has so many good Mexican restaurants, and it's hard to choose the best of the best. My husband and I like the food a LOT at this particular one.

This place has it all...a world class bakery, great healthy French fusion food, fine wine, and a dining room that is nearly always full of chatty people. They are surely doing something right! Take note: they are not open on Sunday.

This is a popular eatery in downtown Colorado Springs. Their sandwiches are SO GOOD, my husband and I go back again and again. We like to eat outside and people-watch when the weather is nice. Children especially like being outdoors.

What a unique place downtown! It is underground. Look for the stairway at ground level, right off the street. Don't look for a building because you won't see one! There is a parking garage closeby if you do not find parking on the street. Try the rabbit meatloaf meal, large enough to share. I love the cauliflower soup.

An upscale restaurant in the heart of downtown where you can get your steak on. There is a nice outside eating space if you prefer to eat in a sunny space. A high top table at the window, looking out at the outdoor eating area is what to shoot for. A nice date night kind of place if you are looking for that.

Most of the reviews from this restaurant are favorable. I enjoy not only the food, but the setting. It's in a bustling center with a lot of restaurants and stores, Costco being one of them. The mountain views are stunning.

This Colorado chain is "off the chain!" You order at the service counter and your food is brought to your table by the server. Best burgers ever! Chicken options for those who don't eat beef. Kinda fast food, seeing how you order at the counter, and kinda not. The restaurant is in a busy center with gorgeous mountain views.

It's less than two miles from our Airbnb. Great big margaritas, especially popular are the frozen kind. Order food at the register and it is brought to the table by a server. Usually busy because of the hip, casual and modern environment. On nice days, the big garage doors open and customers enjoy fresh breezes throughout the whole restaurant and diners can sit outside if they'd like. Simple and somewhat bland Mexican food and great drinks.

Being a former teacher, I get so awed when I see a repurposed elementary school that has a different business in every former classroom. The coffee shop is minimal in decoration but big on flavor and popularity. Though Colorado's people are really nice in general, the staff here is one of the friendliest I've encountered in Colorado Springs.

Parks & Nature

One of the most popular sightseeing spots in Colorado Springs. Breathtaking views and some wide open spaces. A definite must-see. Free, although a parking fee might be added this year. Park at the Visitor's Center as an option, and walk the mile or so to the heart of the park. There is a shuttle that can take you back.

Sightseeing

Not for the faint of heart, the Incline stairway beckons to be climbed! It gains approximately 2,000 feet in elevation as you proceed on the one-mile railroad tie stairway to the top. A hiking trail brings you back down. The Manitou Incline was initially built in 1907 for use in construction of city water lines and a hydroelectric plant. When the construction was finished, the Manitou and Pike's Peak Railway took over the cable car as a tourist operation. No cable cars now. Instead, it's a stairway for the physically fit and adventurous. It's a free attraction but you might have to pay for parking.

Shopping

This is from their website: Garden of the Gods Trading Post, located on the Southwest edge of the world-famous Garden of the Gods, is Colorado’s largest, oldest and best gift shop and art gallery. With over 25,000 square feet and nearly 90,000 different items to choose from, you’re sure to find the perfect gift or souvenir for everyone on your list! My words: The ride to the Trading Post and beyond is so scenic, your jaw might drop. There is a restaurant, and you can buy coffee and Colorado-made ice cream too.

This is a 70-acre shopping/restaurant/service open air center with free summer concerts. Don't let the anchor stores like Costco and Lowes fool you. UVC has plenty to stimulate the senses and keep you busy with it's 60 plus stores and restaurants. And if hiking or biking are on your agenda, University Village Colorado is a great place to begin or end your trek, since UVC’s Overlook Park doubles as a trailhead with access to the Pikes Peak Greenway trail system and a pedestrian underpass to the University of Colorado at Colorado Springs (UCCS).
