I would recommend you visit the old Nice market. Specially in the morning, for breakfast, you could have an excellent French Crepe with an espresso, or a croissant with a cappuccino, but the experience is amazing.
Along the Promenande Paillon you will find the the colorful building of old Nice. Visit the flower and antique et at Cours Saleya, enjoy local specialties such as socca, buy some olive oil, baskets, spices, and soaps. Basically, shop till you drop! Then stop for a glass of rosé and people watch.
