If you have a bit of time and don't mind a bit further drive, head out to Jenolan Caves, many caves at various levels for walking through and the Blue Lake is beautiful. The road out there is NSW's answer to the Amalfi Coast :)

I recommend you do the earliest tour so as to avoid the larger groups that arrive by bus. Drive carefully and slow down to avoid the precious Wildlife on the road.

Jenolan Caves are the world's oldest caves, hidden in the hills of the Blue Mountains, near Oberon.
