Every hour, chef Zhiqiang Li’s team pulls, punches and stretches out mounds of dough until they form silken, delicate strands of Lanzhou-style lamian. These wonderfully fresh noodles shine in noodle dishes and soups, topped with braised eggs and beef tenderloin.
