If you really want a local feel, try this dice/Kareoke bar in Wan Chai. Walk up the stairs, it's a bit dark and loungey, but very local and the dice games are fun. Kareoke is only in Chinese.

Expensive, high-class shopping centre with upscale stores - LV, Cartier, etc. It's directly connected/accessible to the MTR station and there is an exit on the 2nd floor out to the Hong Kong Botanical Garden, which is definitely worth a look whether in the summer or winter! Edit
